Summer Cooking Adventures

Summer is always a time my son and I try to bake and cook together.  He is great at baking, and we have a lot of fun. I am always on the hunt for 'new' stuff  to try, and on my recent trip to the South I was introduced to something called the 'Whoopie Pie'.

I had never even heard of it before I went to the South, and didn't taste one while I was there but one of my favorite authors posted the recipe she and her daughter made for 'Whoopie Pie' and we decided to try it! With some slight modifications. Below is a general description but the whole, precise recipe will be linked at the end. 

First we sifted together flour (1/2 whole wheat and 1/2 cake flour) Cocoa Powder, baking soda, and salt.
Next we made the batter out of  butter and shortening (we used butter crisco sticks and saved a step)  brown sugar splenda, egg and vanilla. We slowly folded the flour mixture in, with the medium speed on the mixer. (I have a tendency to add little teaspoons of water as I go along, because I don't like cookies to be too 'cakey'.)

After they bake for 10 minutes you get:

NEXT: the filling: Mix together marshmallow fluff, shortening (we used butter crisco again hence the yellowish tinge to our filling), confectioner's sugar and vanilla

  2. Yeah, me too! But before last year I had never tried chicken fried steak either...now I know why :)

  4. Chicken fried steak is a steak (beef) cooked and breaded like chicken (there is no chicken in it). I had it when we went to Memphis! :)

    Pretty much every version of a whoopie pie you can imagine can be found in this book.
    (I grew up in Amish country. I am *still* giggling that you'd never heard of them. And chicken fried steak...nasty ass shit)

  7. Are whoopie pies similar to Moon pies? I haven't had a moon pie either but at least i have heard of it! :) Chicken fried steak was super gross.....but at least I know what it is now! :)
